The art of creating mezcal is an intricate process, lovingly executed using techniques passed down by mezcaleros for over four centuries.

From Agave to Bottle
We begin with wild-grown agave cupreata (or Chino), carefully selected only once it has fully matured after 8–10 years. This ensures that the plant has developed the sugars and minerals needed to create a mezcal of depth, balance, and authenticity.
The maestro mezcalero skilfully removes the sharp leaves of the agave with a coa, leaving behind the heart of the plant—the piña. This step is done entirely by hand, reflecting a tradition that has been passed down for generations.
The harvested piñas are placed in underground conical pits lined with volcanic stones. Covered with earth and fibres, they roast slowly over wood fire for several days. This process caramelises the sugars and infuses the agave with subtle smoky notes, forming the foundation of mezcal’s flavour.
Once cooked, the softened agave is crushed with a wooden mallet and canoe. Fibres and juices are ground together to create a rich, fibrous mash that carries both the sweetness of roasted agave and the depth of the earth it grew in.
The mash is transferred to open-air pinewood vats, where wild yeasts from the environment naturally begin fermentation. Over 15 days, sugars are transformed into alcohol, developing complex layers of aroma and taste unique to each batch.
The fermented liquid is twice distilled in rustic pinewood and copper stills, where the mezcal slowly flows drop by drop through a narrow spout. This artisanal method preserves the authenticity of the process, capturing the purest essence of the agave in a way that feels both raw and deeply traditional.
Moteado is bottled in a vessel created exclusively for the brand—an original design that draws inspiration from ancient elixirs and sacred rituals. Each bottle is both made and filled by hand.
